Believe it or not, a maraschino cherry starts life as a perfectly normal, pale-yellow cherry. We’re talking about the Royal Ann or Napoleon variety, picked fresh from a tree, not a lab. These cherries are tart, a little shy, and totally unprepared for their future fame.
Once picked, they get dunked in a brine solution of sulfur dioxide and calcium chloride. This process bleaches them white and firms them up, like giving them a very aggressive spa day. They lose their cherry flavor, their color, and any sense of dignity they once had.
