Every can of StarKist tuna—whether it’s solid white albacore, chunk light, or the pouch-packed kind—has already been fully cooked before it ever reaches your pantry. The process involves steam-cooking the raw fish inside sealed cans at high temperatures, which kills any bacteria and locks in that familiar texture. So, you can confidently eat it straight from the can without any extra heat.
Think of it like a pre-boiled egg or a rotisserie chicken from the grocery store—it’s ready to go. The cooking happens at the cannery, not in your kitchen.
How Does the Cooking Actually Work?
StarKist follows a time-tested method: raw, frozen tuna is thawed, cleaned, and loaded into cans with a bit of water or oil. The cans are then sealed and placed in massive pressure cookers called retorts, where they’re heated to around 240–250°F for a precise amount of time. This process is similar to pressure canning at home, but on an industrial scale.
The result is a product that’s both shelf-stable and completely safe to eat. Fun fact: The steam-cooking also creates that distinct “canned tuna” aroma, thanks to the natural breakdown of oils and proteins under heat.
