Mistake #1: Over-drying. If your rice breaks when you squeeze it, you’ve gone too far. It should feel like dry sand, not broken glass.
Mistake #2: Drying in a closed container. This traps steam. Your rice will turn into sad, wet lumps. Always use an open sheet or a breathable bag.
Mistake #3: Forgetting to fluff it. If you leave big clumps during drying, they’ll dry into terrible, rock-like formations. Break it up before you dry it. This is non-negotiable.
