Don’t Salt Too Early!
Salting more than an hour before cooking can draw moisture out. Aim for about 30 minutes before it goes in. Or just salt it right before roasting. Simplicity wins.
Baste with Confidence (or Not)
Basting is nice, but you don’t have to open the oven every ten minutes. If you buttered it well, it'll be fine. Every time you open that door, you lose heat. One or two bastes during cooking is plenty.
