Because we’ve been conditioned by the C-word. “Cheesecake” has the word “cake” in it, and cakes must have flour, right? Wrong. That’s like saying a seahorse has a horse’s hooves. Semantics are a trap. Cheesecake is actually a type of custard that you can bake or set with gelatin. Or, as I call it, “significantly improved yogurt.”

Think about it: you wouldn’t ask if a flan has flour. You wouldn’t demand a crème brûlée’s resume. But slap “cake” on a dairy-based disk of heaven, and suddenly we’re all forensic pastry investigators.

Here’s where it gets weird. Some cheesecakes do contain a tiny bit of flour. Why? Not for structure—cream cheese does that job like a buff lifeguard. Flour is occasionally added as a stabilizer to prevent cracking, kind of like emotional support for your dessert. But we’re talking two tablespoons for an entire nine-inch cake. That’s a whisper of flour. A ghost of wheat. Barely there.

If you’re gluten-intolerant, you can safely eat 99% of cheesecakes without flinching. Unless you get one of those fancy Italian “ricotta” cheesecakes, which sometimes do use flour and are basically a whole different species. Proceed with caution, celiacs.
