If it sinks to the bottom and lies flat like a beached whale, it's super fresh. If it stands on one tip like a tiny, wobbly submarine, it's older but still fine. If it floats like a cork at a luau, toss it. That egg is a balloon of bad news.
Why? Eggshells are porous. Over time, air sneaks in through tiny holes. An old egg has a big air pocket inside. That pocket makes it buoyant. Think of it as the egg's own tiny life raft—to nowhere good.
